Popcorn Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cups flour
  • 1/2 tsp baking soda
  • pinch salt
  • 2 cups popped popcorn, lightly crushed
  • 1 cup (6 oz) semisweet chocolate chips
  • 1/2 cup pecans

Directions

  1. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  2. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Stir in the popcorn, chocolate chips, and pecans.
  3. Drop by TBSP 2 in apart onto greased baking sheets.
  4. Bake at 350 degrees for 13-14 minutes or until golden brown. Remove from wire racks to cool.
