Pork Breading

Ingredients

  • Mix #1:
  • 1 1/4 cups panko Japanese bread crumbs
  • 3 Tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley (or 1 Tbsp. finely chopped fresh)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 tsp kosher salt (use less if using table salt - 1 1/4 - 1 1/2 tsp.)
  • 1 tsp freshly ground black pepper
  • Mix #2:
  • 2 cups cornmeal
  • 2 cups whole wheat flour
  • 1/4 cup salt
  • 1/4 cup rubbed sage
  • 1/4 cup sugar
  • 1/4 cup paprika
  • 1/4 cup onion powder

Directions

  1. Place ingredients in a large zip-top plastic freezer bag.
  2. Sprinkle pork with a bit of salt and pepper.
  3. Place pork into breadcrumb mixture.
  4. Shake and press pork chop until coated well.
  5. Place on prepared baking sheet. Repeat with all pork pieces.
  6. Bake in pre-heated oven until thickest portion of meat reaches 155° and breading is dark golden, about 40 minutes.
  7. Remove from oven and let rest 5 minutes.
