Ingredients

  • 4 cloves garlic minced
  • 2 shallots or onions minced
  • 3 dried peppers chopped and ground
  • 1 tablespoon sesame oil
  • 2 pounds minced pork sausage
  • Zest of one lime, plus juice
  • 3 green onions diced
  • ¼ cup cilantro
  • ¼ cup mint
  • 1 cucumber
  • <1 tablespoon fish sauce
  • <1 tablespoon apple cider vinegar
  • 1 teaspoon chipotle powder
  • 2 teaspoons garlic powder
  • ½ cup roasted, ground cashews or hazelnuts

Directions

Saute:

4 cloves garlic minced
2 shallots or onions minced
3 dried peppers chopped and ground
1 tablespoon sesame oil

Add:

2 pounds minced pork sausage
(Brown it) mince and it browns. You want the meat as small as possible.

Add:

Zest of one lime, plus juice
3 green onions diced
¼ cup cilantro
¼ cup mint
1 cucumber
<1 tablespoon fish sauce
<1 tablespoon apple cider vinegar
1 teaspoon chipotle powder
2 teaspoons garlic powder
½ cup roasted, ground cashews or hazelnuts

Serve with rice and lettuce
