Directions

  1. Place salt mixture in a bowl

Add:

  1. Oregano, rosemary, & thyme, & black pepper. Add to 1/3 cup EVOO.
  2. Mix together
  3. Rub over entire roast
  4. Place roast in oven that has been preheated to 450. Cook to desire internal temp. 145-150.
  5. Remove from oven. Flip to presentation side.
  6. Side up & cover & let rest for 10-15 min.
