Pork Shoulder: Garlic Rosemary

  • 6-8 pound bone in pork shoulder
  • 1 tablespoon paprika
  • 2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 5 large carrots (peeled cut into large chunks)
  • 3 pounds red potatoes (cut in half or quartered)
  • 1 large onion cut into chunks
  • 6 cloves garlic minced
  • 2 teaspoon fresh rosemary chopped
  • olive oil
  • Fresh chopped parsley for garnish
  • For the gravy
  • 3 tablespoons flour
  • 3 cups chicken stock
  • salt and pepper to taste
