Heat large stockpot over medium-high heat. Add bacon and cook until crispy, stirring occasionally. Transfer the bacon to a separate plate, reserving 3 T. of bacon grease. Add onion and saute 5 min or until soft. Sprinkle flour on top of onion, stir until combined. Saute for an additional minute to cook flour, stirring occasionally. Stir in chicken stock until combined. Stir in milk, potatoes and bacon; Cook until mixture reaches a simmer, not boiling. Reduce heat to medium-low, cover and simmer for 10-15 min more or until potatoes are soft, stirring occasionally every few minutes. Stir in remaining ingredients. Serve.
