Primal Slow Cooker Short Ribs

Ingredients

  • 3–4 lbs beef short ribs
  • 1 tbsp olive oil or avocado oil
  • 1 medium onion, sliced
  • 3–4 garlic cloves, minced
  • 2 stalks of Celery, chopped
  • 1-2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tbsp coconut aminos, or gluten free soy sauce
  • 1 tsp salt
  • 1 tsp smoked paprika - optional but I love it
  • A few sprigs of fresh rosemary

Directions

  1. Heat oil in a skillet and sear the short ribs for ~2–3 minutes per side. This adds flavor.
  2. Put onion, garlic, and celery in the bottom of the slow cooker.
  3. Place the ribs on top of the vegetables.
  4. Put fresh Rosemary sprigs on top
  5. In a small bowl mix: beef broth, tomato paste, coconut aminos, onions, garlic, salt, paprika and pour over ribs.
  6. Cook low for 8 hours (best) or high for 4–5 hours.
  7. Meat should be fall-off-the-bone tender.
  8. Spoon juices over the ribs before serving.
  9. Top with soft boiled jammy eggs.
