Pulled Pork

Ingredients

  • 2 medium yellow onions, thinly sliced
  • 4 medium garlic cloves, thinly sliced
  • 1 cup chicken stock
  • 1 Tbsp. packed brown sugar
  • 1 Tbsp. chili powder
  • 1 Tbsp. kosher salt (can add more as needed)
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground cinnamon
  • 1 (4-1/2 to 5 lb) boneless or bone-in pork shoulder (also known as pork butt)
  • 2 cups barbecue sauce (optional)

Directions

  1. Place onions and garlic in an even layer in crockpot/slow cooker. Pour in stock or broth.
  2. Combine sugar, chili poder, salt, cumin and cinnamon in small bowl.
  3. Pat pork dry with paper towels then rub spice mixture all over pork.
  4. Place meat in crockpot/slow cooker. Cover and cook for 6-8 hours on high or 8-10 hours on low.
  5. Turn off slow cooker and remove pork to a a cutting board. Set strainer over bowl and strain onion mixture from liquid. Keep liquid and set aside.
  6. Use two forks to remove pork from the bone into shredded, bite-sized pieces. Discard any large fat pieces.
  7. Return shredded meat to crockpot and add BBQ sauce (if you choose to use it). Also add strained liquid if meat seems dry or isn't flavorful.
  8. Keep crockpot on warm while serving.
