Pumpkin Muffins Deluxe

Ingredients

  • 3 cups whole wheat flour
  • 3 cups all purpose flour
  • 4 tsp baking powder
  • 2 tsp baking soda
  • 1 tbsp salt
  • 1 tbsp ground cinnamon
  • 2 tsp ground nutmeg
  • 1 tsp ground ginger
  • 1 cup brown sugar
  • 1 cup stevia
  • 2 cup vegetable oil
  • 4 cup canned pumpkin
  • 8 large eggs
  • 1 cup buttermilk OR 1 cup milk + 1 tbsp lemon juice
  • 2 cup butterscotch chips
  • 2 cup chopped pecans or coconut
  • 2 tbsp shelled pumpkin seeds for topping

Directions

  1. Preheat oven to 350 degrees.
  2. Line 4 pans of 6 jumbo muffins with paper liners.
  3. In a large mixing bowl mix all ingredients, except pumpkin seeds
  4. Divide batter among prepared muffin cups filling each nearly full.
  5. Sprinkle pumpkin seeds on top.
  6. Bake in preheated oven until toothpick inserted into the center comes out clean, about 25 minutes. 
  7. Let cool in muffin pan several minutes. Enjoy a warm fresh muffin.
  8. Cool the rest and store in a container in the fridge or freezer.
