Pumpkin Scones

Ingredients

  • 30g butter, softened
  • 1/4c castor sugar
  • 1 egg
  • 1c cooked mashed pumpkin (approx 340g)
  • 2 1/2c S R Flour
  • Pinch of salt
  • 1/2t cinnamon
  • 1/4t nutmeg
  • 1/4 - 1/2c milk

Directions

  1. Beat butter and sugar, add pumpkin and mix well.
  2. Add egg and beat well.
  3. Fold in sifted dry ingredients alternately with 1/4c milk.
  4. If necessary add more milk to make a soft dough, not a sticky one.
  5. Turn onto a floured surface and knead lightly.
  6. Pat into 2-3cm thickness and cut into rounds.
  7. Place on scone tray, glaze with a little milk
  8. Bake in a hot oven 12-15minutes until golden
  9. Makes about 1 dozen.
