Peel pumpkin. Cut into 1.5cm cubes. Toss in 1T olive oil. Spread in single layer and bake for 20min.
Heat remaining oil. Sauté onion and garlic over low heat for 5min. Add frozen spinach and cook for 10min, stirring regularly until spinach is completely thawed.
Add feta and cooked pumpkin and seasoning. Mix well. Cool
Increase oven temp to 220*C
Cut each pastry sheet in half. Add 1/6 of mixture along the length of each piece. Roll into logs and seal ends with beaten egg wash.
Cover outside of log with egg wash and sesame seeds. Cut each log into 6 pieces and slash the tops.
