  • 2 low carb tortillas
  • 26g shredded low fat cheese
  • Salsa
  • SNACK:
  • 2 mandarins
  • 1/2 yoghurt
  • 1/2 cucumber

Directions

  1. Make a quesadilla by spreading 1/4 cup fat free refried beans over a low carb tortilla. Sprinkle with shredded cheese. Top with salsa and another low carb tortilla.
  2. Microwave on high for 45 seconds.
  3. Serve with cucumber spears and 1/2 cup yoghurt, topped with 2 mandarins.
