Quinoa And Carrot Salad

Ingredients
- 1/2 cup quinoa
- 1/4 cup lemon juice
- 3 Tb. olive oil
- 1/2 tsp. salt
- 1 tsp. sugar
- 4 medium carrots, peeled and thinly sliced
- 1 can chickpeas, drained and rinsed
Directions
Cook quinoa according to package directions. Spread on baking sheet to cool.
Whisk lemon juice with oil, salt and sugar. Add carrots and toss to coat.
Mix in cooled quinoa and chickpeas.
