Quinoa With Sautéed Veggies And Gravy

Ingredients

  • ½ cup of quinoa
  • 2 tbsp of coconut oil or extra virgin olive oil
  • 1 yellow onion, diced
  • 2-3 garlic cloves, minced
  • 1 squash, sliced
  • 11 oz fresh mushrooms, thinly sliced
  • mushroom gravy (you can either create your own or use an instant alternative - just be sure to double check it’s vegan!)
  • fresh parsley, chopped
  • 1/2 tsp garlic powder
  • 1 tbsp of nutritional yeast (optional)
  • salt and pepper to taste
