Raspberry and Mascarpone Creams

Ingredients

  • 1 tub mascarpone cheese
  • 300g raspberries (put 9 aside for decoration)
  • 2 tablespoons castor sugar
  • ½ cup lightly whipped cream

Directions

  1. Please raspberries in bowl and sprinkle over the sugar and put them back in the freezer.
  2. In a small bowl, beat mascarpone until soft. Fold in the whipped cream.
  3. Remove raspberries from freezer, 1.5 hours before serving. When raspberries are soft, mash with a fork.
  4. Fold raspberries through mascarpone mixture.
  5. Spoon into glasses (cocktail glasses recommended). Decorate with 2 or 3 on top.
  6. Chill until ready to serve.
