Raspberry Clafoutis – Easy & Light French Dessert

Ingredients

  • 100 g ¾ cup all-purpose flour, sifted
  • 100 to 130 g ½ to ⅔ cup raw cane sugar (adjust depending on fruit acidity)
  • 4 large eggs
  • Zest of 1 lime
  • 1 tbsp 15 ml vanilla extract or seeds of 1 vanilla pod
  • 120 ml ½ cup full-fat crème fraîche (35%)
  • 250 ml 1 cup whole milk
  • Pinch of salt
  • 30 g 2 tbsp unsalted butter (for greasing the ramekins)
  • 180 to 220 g 1½ cups fresh raspberries (or frozen, unthawed)
