Ingredients

  • 1 Tbsp Red curry paste
  • 1 Tbsp Garlic
  • 1 Tbsp ginger
  • Chicken
  • Veggies
  • 1 can Coconut milk
  • 1/3 cup Frozen peas
  • 2 cups Frozen shrimp
  • 1 Tbsp Fish sauce
  • 1 Tbsp Soy sauce
  • 1 Tbsp Lime juice
  • Basil
  • Cilantro

Directions

  1. saute the paste, garlic, ginger in a little oil on medium high until cooked through (paste turns color)
  2. Cook chicken in pan.
  3. add fish sauce, soy sauce and lime juice (optional).
  4. Add the veggies then after a couple of minutes add a can of coconut milk.
  5. Add frozen peas and thawed shrimp, then let it simmer until the coconut milk thickens the sauce.
  6. throw in a handful of basil and cilantro at the end
