Rhubarb Cake

Ingredients

  • 2 cups chopped rhubarb
  • 1/2 cup sugar
  • 1/2 cup shortening or butter
  • 1 1/2 sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup buttermilk
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Dash of salt

Directions

  1. 1. Chop rhubarb and mix 1/2 cup of sugar. Let this sit while you mix batter. Preheat oven at 350 degrees.
  2. 2. Grease and flour 9 x 13 inch pan.
  3. 3. Cream sugar and shortening, add egg and vanilla.
  4. 4. Sift dry ingredients.
  5. 5. Add alternatively starting with dry ingredients and buttermilk.
  6. 6. Stir in rhubarb and pour in pan.
  7. 7. Sprinkle about 1/3 cup cinnamon sugar.
  8. 8. Cook 55 minutes.
