Rhubarb Mojito

Ingredients

  • 1/2 cup fresh rhubarb, chopped
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 8-10 fresh mint leaves
  • 1 lime, cut into wedges
  • 2 oz white rum
  • Club soda
  • Ice cubes
  • Fresh cucumber slices (optional)
  • Fresh mint sprig for garnish

Directions

Prepare the Rhubarb Syrup:

  1. In a small saucepan, combine the chopped rhubarb, granulated sugar, and water.
  2. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes, or until the rhubarb is soft and the mixture has thickened.
  3. Strain the mixture through a fine-mesh sieve, pressing down to extract as much liquid as possible. Discard the solids.
  4. Let the rhubarb syrup cool to room temperature.

Muddle the Mint and Lime:

  1. In a tall glass, add the fresh mint leaves and lime wedges.
  2. Use a muddler or the back of a spoon to gently muddle the mint and lime to release their flavors.

Assemble the Mojito:

  1. Add the cooled rhubarb syrup to the glass.
  2. Pour in the white rum.
  3. Fill the glass with ice cubes.
  4. Top off with club soda.
  5. Stir gently to combine.

Garnish and Serve:

  1. Add fresh cucumber slices to the drink, if desired.
  2. Garnish with a sprig of fresh mint.
  3. Serve immediately.
