Put the rice,chicken and water into a pot,cover and place over a high heat.When the liquid begins to boil up,reduce the heat before it boils over.Uncover the pot only partially.Skim off the foam thoroughly.
Simmer the rice for30 to 40 min.When the grains become plump,add a small amount of salt.Remove from the heat,stir once and ladle into individual bowls.Place the ham,long leek,chinese chives and szechwan pickles on the top.
