Roast Carrots

Ingredients

  • Ingredients:
  • • 1lb carrots, peeled & sliced
  • • 2 tbsp olive oil
  • • 11/2 tbsp lemon juice
  • • 1 tbsp Dijon mustard
  • • 1 tosp honey
  • • 2 garlic cloves, minced
  • • 1-2 tosp fresh dill, chopped (1-2 tsp dried)
  • • 1/3 cup feta cheese, crumbled
  • • Salt & Black pepper, to taste
  • Instructions:
  • Toss everything together, spread on a tray with parchment paper, and roast at 425°F (220°C)
  • 25-30 min until golden. Finish with feta
