Ingredients

1.75kg boneless pork belly, skin well scored in a cross hatch pattern
sea salt flakes
2kg of medium sized floury potatoes (such as Maris Piper)
2 tbsp olive oil, plus extra for the pork
a large knob butter
1 bulb garlic, broken into cloves
a few sprigs thyme
150ml white wine
GREMOLATA
a small bunch curly parsley, finely chopped
1 lemon, zested
1 clove garlic, finely chopped
