Salt & pepper the chicken and keep it for 2 hours or so. Make a mix of olive oil, thyme & red pepper and add some rosemary. If you wish you could add some fresh crushed garlic and rub this mix on the salted chicken. Keep it in the fridge for 20 hours or so, then warm the oven till 200 degrees, put the chicken in the glass form, adding some slightly salted butter under it, avoiding dry meat. oven for an hour. Enjoy the result.
