Roasted Garlic Spaghetti Squash Lasagna Boats

Ingredients

  • 1 spaghetti squash
  • 1 bulb garlic
  • 450g mince
  • 4 strips bacon
  • 1/2 onion
  • 1 bay leaf
  • 1 tsp thyme
  • 1 tsp sage
  • 1 tbsp basil
  • 1 can tomatoes
  • 1 cup water
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 1/4 cup milk
  • 3/4 cup provolone
  • 1 cup mozzarella

Directions

  1. Preheat oven to 210 degrees.
  2. Cut top off garlic bulb, drizzle oil over it and wrap in foil. Put in oven for 45 minutes.
  3. Slice squash length wise and drizzle oil over it. Salt and pepper it. Flip it skin side up on tray. Put in oven for 30 minutes at 175 degrees.
  4. In a fry pan, fry chopped bacon, onion, bay leaf, sage, thyme and basil. Salt and pepper it. Add mince. Once browned pop in tomatoes and water. Then put roast garlic in it and stir it in.
  5. In another pan, put in butter and flour. Whisk it in. Add milk. Once thickened pop in provolone.
  6. Scrape squash, add meat sauce, cheese sauce, add mozzarella and bake it for 20-30 minutes at 175 degrees.
  7. Grate Parmesan and then serve.
