Roasted Potatoes

Ingredients

  • Vegetables:
  • 2 lbs red skin potatoes
  • 1 yellow onion
  • Seasonings:
  • 5 bacon slices
  • 2 T bacon grease
  • 2 T Rosemary
  • 1 T minced garlic
  • 1/2 t thyme
  • 1 t spanish smoked paprika
  • 1 t salt
  • 1 t pepper

Directions

  1. Preheat oven to 400
  2. Cook bacon, then crumble and save grease
  3. Cube potatoes and dice the onion
  4. Saving some bacon bits, toss all ingredients in a bowl until potatoes are coated
  5. Evenly spread potatoes on a large parchment lined baking sheet
  6. Bake for about 40 minutes, stirring halfway through, until potatoes are golden brown
  7. Top in remaining bacon bits
