Roasted Shrimp & Scallops

Ingredients

  • 1 lb. large shrimp, peeled and deveined, but with the tail still on
  • 1lb Scallops Large
  • 4 tbsp. olive oil
  • 6 tsp. minced garlic
  • 2 tsp. Italian seasoning
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh lemon juice to taste
  • 2 tbsp. chopped parsley

Directions

Step 1: Prepare the Shrimp & Scallops

Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
Season the Shrimp & Scallops
In a large bowl, combine the shrimp, olive oil, minced garlic, Italian seasoning, grated Parmesan cheese, salt, and pepper. Toss until the shrimp & Scallops are evenly coated with the seasoning mixture.
Step 2: Roast the Shrimp & Scallops

Arrange Shrimp & Scallops
Spread the seasoned shrimp & Scallops in a single layer on the prepared baking sheet.
Roast:
Place the baking sheet in the preheated oven and roast the shrimp & Scallops for 8-10 minutes, or until the shrimp are pink, and scallops are cooked and shrimp are opaque, and cooked through. Be careful not to overcook the shrimp,scallops as they can become tough.
Step 3: Finish and Serve

Add Fresh Lemon Juice:
Remove the shrimp from the oven and immediately squeeze fresh lemon juice over them to taste.
Garnish:
Sprinkle the chopped parsley over the roasted shrimp for a fresh and vibrant touch.
Serve:
Serve the Garlic Parmesan Roasted Shrimp & Scallops hot, either on their own or with your favorite side dishes like rice, pasta, or a fresh green salad.

Shrimp: Make sure to use large shrimp & Scallops for this recipe, as they are less likely to overcook and dry out. Leaving the tails on adds a nice presentation, but you can remove them if preferred.
