Roasted Shrimp & Scallops

Ingredients

  • 1 lb. large shrimp, peeled and deveined, but with the tail still on
  • 1lb Scallops Large
  • 4 tbsp. olive oil
  • 6 tsp. minced garlic
  • 2 tsp. Italian seasoning
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh lemon juice to taste
  • 2 tbsp. chopped parsley

Directions

  1. Step 1: Prepare the Shrimp & Scallops

Preheat Oven:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Season the Shrimp & Scallops
  3. In a large bowl, combine the shrimp, olive oil, minced garlic, Italian seasoning, grated Parmesan cheese, salt, and pepper. Toss until the shrimp & Scallops are evenly coated with the seasoning mixture.
  4. Step 2: Roast the Shrimp & Scallops

  6. Spread the seasoned shrimp & Scallops in a single layer on the prepared baking sheet.

Roast:

  1. Place the baking sheet in the preheated oven and roast the shrimp & Scallops for 8-10 minutes, or until the shrimp are pink, and scallops are cooked and shrimp are opaque, and cooked through. Be careful not to overcook the shrimp,scallops as they can become tough.
  2. Step 3: Finish and Serve

Add Fresh Lemon Juice:

  1. Remove the shrimp from the oven and immediately squeeze fresh lemon juice over them to taste.

Garnish:

  1. Sprinkle the chopped parsley over the roasted shrimp for a fresh and vibrant touch.
