STEP ONE: Open the root beer can and pour root beer into a measuring cup. Let the root beer chill, uncovered, in the refrigerator for 2 hours. This is to allow the root beer to go “flat”. You want as few bubbles as possible.
STEP TWO: Just before you are ready to make the popsicles, measure out the ice cream into a medium-sized mixing bowl. Allow the ice cream to sit at room temperature for about 5 to 8 minutes
STEP THREE: Whisk in the flat root beer until smooth
STEP FOUR: Divide the root beer mixture evenly between the popsicle molds. Add the popsicle sticks and freeze for at least 4 hours, or until the popsicles are frozen through. Quickly run the popsicle molds under hot water to release the popsicles. Keep frozen until ready to serve
