Russian Fudge

Ingredients

  • 3 cups sugar
  • 0.5 cup milk
  • 0.5 cup sweetened condensed milk
  • 125g butter
  • Pinch of salt
  • 1 tablespoon golden syrup

Directions

  1. Put sugar and milk into a saucepan. Heat gently, stirring constantly until sugar dissolves.
  2. Add condensed milk, butter, salt and golden syrup. Stir until butter has melted.
  3. Bring to the boil and continue boiling to the soft ball stage, stirring occasionally to prevent burning.
  4. Remove from heat. Cool slightly. Beat until thick and glossy (at least five minutes).
  5. Pour into buttered tin. Mark into squares. Cut when cold.
  6. Vanilla essence or chopped nuts may be added to fudge before beating if desired.
