Sables Cookies

Ingredients

  • 4 sticks of butter
  • 2 cups of powder sugar
  • 2 eggs room temp
  • 1/2 tsp lemon zest
  • 1 tsp vanilla extract
  • 6 cups of flours
  • Apricot jam

Directions

  1. In large bowl combine all ingredients except flour. Add flour slowly after mixing all other ingredients.
  2. Roll out to about 4 mm thick, cut out “tops & bottoms” for your sables
  3. Place on baking tray and bake 350 for 8-10 minutes. The sables should be just set but still white.
  4. When the sables are fully cooled, place all the sables TOPS onto tray & dust generously with the powder sugar.
  5. Apricot jam spread onto the underside of the sables bottoms.
  6. Carefully place a top over the blob of jam.
  7. Allow to set, then store up to 10 days.
