Salad — Black Bean Corn

Ingredients

  • 3 #10 cans black beans drained and rinsed (108oz each)
  • 4 bags frozen corn thawed completely and drained (2 pounds each)
  • 1 #10 can roasted red peppers diced. Reserve juice
  • 8 cups shredded red cabbage (1 medium)
  • 1/2 bag green onion sliced (1 pound)
  • 2 cups lime juice
  • 2 cups canola oil
  • 2 cups olive oil
  • 1 cup roasted red pepper liquid
  • 3 tablespoons minced fresh garlic
  • 1 tablespoon ground cumin
  • 2 bunches of cilantro chopped
  • 5 tablespoons of Kosher salt
  • 1 teaspoon cayenne pepper

Directions

  1. Mix corn, black beans, cabbage, roasted red peppers, cilantro and green onions together. In a separate bowl mix all remaining ingredients and pour into the bean and corn mixture. Mix well.
