Salad: Quinoa Lentil With Lemon Herb Vinaigrette

Ingredients

  • 1 cup quinoa uncooked
  • 1 cup green lentils
  • 2 cup low sodium chicken broth
  • 1 cup water
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • ¼ cup red onion, chopped
  • ½ cup feta, crumbled
  • 1 tsp fresh thyme
  • 1 sliced avocado optional
  • Lemon Herb Vinaigrette
  • 4-5 Tbsp lemon juice *about 1 lemon, more if needed
  • ½ cup olive oil
  • 2 garlic cloves, minced
  • ¼ tsp pepper
  • ¼ tsp salt
  • 3 tsp whole grain dijon mustard
  • 1 tsp fresh cilantro, chopped
