Salad - The Best One Ever!!

  • 1/4 cup chopped mint

  • 1/2 cup chopped red pepper
  • 1 carrot grated
  • 8 cherry tomatoes chopped in quarters
  • 1 1/2 cup cucumber diced
  • 3 reddish thinly sliced
  • 1 small fennel sliced
  • 1/2 avocado diced
  • Spice
  • 1/8 cup chopped Pepperoncini or Jalapenos
  • Sweet
  • 5 dates chopped
  • Crunch
  • 1/4 tsp olive oil
  • 1/2 cup pumpkin seeds
  • 1 tbsp nutritional yeast
  • 1/2 tsp sea salt
  • Creamy
  • 4 tbsp Vegan ricotta
  • Or
  • 1/4 cup vegan parmesan
  • Dressing
  • 1/2 cup fresh lemon juice
  • 1 1/2 tsp dijon mustard
  • 1/2 cup olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

  • 1/2 tsp ground black pepper
  • 1 1/2 tbsp agave
