Preheat oven to 475 degrees F. Coat a baking sheet lined with aluminum foil lightly with canola oil
Cut zucchini into strips (1/2 by 4 inches)
Combine flours, cornmeal and pepper in a large zip lock bag. Dip zucchini in lightly beaten egg whites, and then shake in the bag to coat. Arrange on baking sheet so they are not touching.
Bake in centre of oven for 10-12 minutes. Turning once halfway through. Continue to bake until golden brown and still tender about 8-10 minutes more
