Ingredients
- 1/2 cup broccoli florets
- 1/2 cup baby spinach
- 1/2 cup chopped capsicum
- 1/2 cup chopped beetroot
- 100 grams shredded chicken breast (poached or baked)
- 1 tablespoon chopped almonds and sunflower seeds
- 2 teaspoons olive oil
- Squeeze of lemon
- Salt and pepper
- 1/4 cup chopped coriander
Directions
Combine broccoli, spinach, capsicum, beetroot and chicken in a bowl.
Top with chopped almonds and sunflower seeds and drizzle with oil and lemon juice. Season to taste.
Sprinkle with chopped coriander for some extra immunity-boosting deliciousness.
