Sarah’s Immune boosting Bowl - Pg 54

Ingredients

  • 1/2 cup broccoli florets
  • 1/2 cup baby spinach
  • 1/2 cup chopped capsicum
  • 1/2 cup chopped beetroot
  • 100 grams shredded chicken breast (poached or baked)
  • 1 tablespoon chopped almonds and sunflower seeds
  • 2 teaspoons olive oil
  • Squeeze of lemon
  • Salt and pepper
  • 1/4 cup chopped coriander

Directions

Combine broccoli, spinach, capsicum, beetroot and chicken in a bowl.

Top with chopped almonds and sunflower seeds and drizzle with oil and lemon juice. Season to taste.

Sprinkle with chopped coriander for some extra immunity-boosting deliciousness.
