Sausage and Courgette (Zucchini) Pasta Bake

Ingredients

  • 1 tbs olive oil
  • 500 g chicken sausages
  • 500 g tomato pasta sauce
  • 1 Litre Chicken Stock
  • 375 g penne pasta
  • 2 Courgettes (zucchinis) halved and sliced
  • 1 1/2 cups tasty cheese grated

Directions

  1. Preheat oven to 220c (200c fan)
  2. Heat oil in a large pan.
  3. Cook sausages for 5-6 minutes, turning until browned all over.
  4. Set aside.
  5. Combine pasta sauce and Chicken Stock in the pan.
  6. Bring to a boil.
  7. Add pasta and cook uncovered for 10 minutes.
  8. Add Courgette (zucchini) and cook for 5 minutes until pasta is al dente.
  9. Remove from heat and stand, covered for 5 minutes.
  10. Spoon the mixture with the cooked sausages into a medium ovenproof dish.
  11. Stir through ½ cup cheese.
  12. Sprinkle with the remaining cheese.
  13. Bake for 8-10 minutes until golden.
