Sausage and Egg Strata

Ingredients

  • 10 slices white bread
  • 1/4 cup (1/2 stick) butter, softened
  • 1 lb. pork sausage
  • 1 (8 oz.) can sliced mushrooms, drained
  • 1 medium onion, finely chopped
  • 1/2 each green and red bell pepper, finely chopped
  • 12 extra-large eggs
  • 1 cup milk
  • 1 tsp. dry mustard
  • Salt and pepper to taste
  • 3 cups shredded sharp Cheddar cheese

Directions

  1. Spray 9x13 dish with nonstick cooking spray. Remove the crusts from the bread slices and spread 1 side of the bread in butter. Arrange butter side down in the prepared baking dish.
  2. Brown the sausage in a skillet, stirring until crumbly; drain. Sprinkle the sausage, mushrooms, onion and bell peppers evenly over the bread.
  3. Beat the eggs in a bowl. Add the milk, dry mustard, salt and pepper and mix well. Pour over the layers and sprinkle with the cheese. Chill, covered for 8 to 12 hours.
  4. Bake, uncovered, at 300 for 1 hour.
