Sausage and Lentil Soup

Ingredients

  • 1 lb. Italian sausage
  • 1 large onion
  • 1 stalk celery
  • 2 large carrots
  • 6 cups chicken broth
  • 28 oz. diced tomatoes, undrained
  • salt
  • 2 cups dry lentils
  • black pepper, red pepper flakes, basil, oregano, parsley, thyme, jalapenos

Directions

  1. Brown sausage, drain. Combine all ingredients in a large pot, bring to boil. Reduce heat, cover. Simmer for about 1 hour or until lentils are tender. Add water if necessary. To make a thicker consistency you can puree about a cup or two and add back to mixture. Sprinkle with parmesan cheese and serve.
  2. Adding potato chunks is optional.
