Sausage Stuffed Jalapeños

Ingredients

  • 1 pound ground pork sausage, or crumbled bacon
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup shredded pepper jack cheese, or other cheese of choice
  • Several large fresh jalapeno peppers, halved lengthwise and seeded
  • 1 (8 ounce) bottle Ranch dressing (Optional)
  • 1 heaping tbsp. ancho chili powder
  • 1 medium size red onion
  • Seasoning
  • Red pepper tomato sauce

Directions

  1. Cook sausage or bacon in skillet. Drain. Whisk together all cheeses until smooth. Mince red onion. Fold in onion into cheese mixture. Mix in sausage or bacon. Slice jalapenos in half, lengthwise. Scrape seeds out of jalapenos. Either discard seeds or add to cheese mixture for spicier mix. Fill each jalapeno half with about 2 tbsp of mixture. Sprinkle ancho chili powder on top. Bake at 350 degrees for about 10 minutes on a baking sheet, until jalapenos are soft.
  2. Spoon red pepper tomato sauce onto a platter and place jalapenos on top. Serve with Ranch dressing or other sauce or choice.
