Cook rice. 1/2 radishes, then slice thinly. Mix sesame oil and vinegar & season w/ salt/pepper. Add radishes to marinade, stir periodically. Chop garlic and peel & finely chop ginger. Drizzle olive oil in sauté pan on med high, add beef, garlic and ginger. Season salt/pepper. Brown meat. Discard end of bok choy and then thinly slice crosswise. Add sugar, soy sauce, & bok choy for 1-2 minutes.
Mix mayo, 1 tsp water and gochujang.
Rice then top with beef mix, radishes and liquid and drizzle spicy mayo.
