1. Wash the potatoes and slice them with the skin on.
2. Soak them in cold water to remove excess starch.
3. Combine them in a bowl with the flour, Parmesan cheese, salt, pepper, and dried rosemary.
4. Add the water and mix well to combine everything.
5. Place the mixture in a baking tray lined with parchment paper.
6. Bake at 215°C for about 40 minutes.
7. The "schiacciata" is ready!
