  • 1/2 bell pepper, diced
  • 1 small Tomato, diced
  • 1 Egg with extra egg white
  • 1/3 cup of Skinny milk
  • 2 tablespoons of coriander, finely chopped
  • a pinch of Salt
  • a pinch of Pepper
  • 2 tablespoons of spring onions, thinly sliced
  • Avocado-Mango Salsa:
  • 1 large mango, peeled and diced
  • 3/4 cup chopped red bell pepper
  • 1/4 cup chopped fresh coriander
  • 1/3 cup chopped red onion, rinsed under water and drained
  • 1/2 avocado, peeled and diced
  • 1 Tbsp fresh lime juice
  • 1 Tbsp olive oil
  • 1 Tbsp Coconut Water
  • Salt and pepper, to taste
