Shells: Taco Stuffed Shells

Ingredients

  • SHELLS:
  • 12 ounces jumbo pasta shells, cooked to al dente
  • 16 ounces 90% lean ground beef
  • 1 medium onion, chopped
  • 1 medium green bell pepper, seeded and chopped
  • 2 medium garlic cloves, minced
  • One 14.5-ounce can diced tomatoes with juices
  • One 1.25-ounce packet taco seasoning
  • ¼ cup water
  • 1 cup salsa, divided
  • 4 ounces shredded cheddar cheese
  • 4 ounces shredded Monterey Jack cheese
  • TOPPINGS:
  • shredded lettuce, chopped tomato, diced red onion, sour cream and salsa (as desired)
