SHORT CRUST PASTRY

Ingredients

  • 1 cup (150g) flour
  • 1 cup (150g) self raising flour
  • ½ teaspoon salt
  • ½ cup (125g) margarine or butter
  • ½ cup water
  • ¼ teaspoon lemon juice

Directions

  1. Sift flours and salt.
  2. Add shortening, rub into the flour using fingertips, until mixture resembles breadcrumbs.
  3. Gradually add sufficient water and lemon juice to mix to a firm dough, leaving the basin clean.
  4. Sprinkle board lightly with flour, turn dough on yo board and knead lightly until smooth.
  5. Sprinkle flour on rolling pin, roll pastry to size and shape required.
  6. WHOLEMEAL SHORT CRUST
  7. Follow recipe for Short Crust Pastry. Omit ½ cup flour. Use ½ cup wholemeal flour.
