Prepare the Strawberries
For fresh strawberries: Wash thoroughly, hull, and slice the berries. For frozen strawberries, simply allow them to thaw partially or use directly if your blender is powerful enough.
Make Simple Syrup
In a small saucepan, combine sugar and water. Heat gently, stirring, until sugar dissolves completely. Remove from heat and let cool to room temperature. You can refrigerate the syrup to chill it further.
Tip: Simple syrup dissolves more uniformly in the sorbet mixture and prevents graininess.
Puree the Fruit
Place strawberries in a food processor or blender. Add cooled simple syrup, lemon juice, and orange juice (if using). Blend until completely smooth, scraping the sides as needed. Taste and adjust sweetness—add more syrup or honey as preferred.
Churn or Freeze the Sorbet
If you have an ice cream maker, pour the mixture into it and churn according to the manufacturer’s instructions, usually 20–30 minutes, until the texture is creamy and thick.
Store and Serve
Transfer sorbet to an airtight, freezer-safe container.
Freeze at least 2–3 hours, or until firm.
Before serving, let the sorbet sit at room temperature for 10–15 minutes for easier scooping and to enhance its creamy mouthfeel.
