#Singapore Noodles

Ingredients

  • 200 g dry rice noodles (vermicelli)
  • 200 g +/- char siu pork
  • 200 g shrimp
  • 2 eggs
  • 50 g carrots julienne
  • 1/4 red onion sliced lengthwise
  • 100 g +/- bell peppers
  • 50 g bean sprouts or snap peas
  • 2 garlic cloves dices
  • 30 grams garlic chives or green onion cut 1 inch slices
  • SAUCE
  • 1 Tbsp soy sauce
  • 1 Tbsp fish sauce
  • 2 tsp oyster sauce
  • 1 tsp sugar
  • 2 Tbsp curry powder
  • 1 tsp turmeric powder
  • Mix well

Directions

  1. Boil water, turn off heat, add noodles and move around till not stiff.
  2. Remove and place on drying rack.
  3. Heat wok till smoking slightly on high
  4. COOK PROTEINS
  5. Add oil
  6. Eggs
  7. Shrimp
  8. Pork(if raw)
  9. Set each aside before cooking the next
  10. Add more oil
  11. Cook vegetables
  12. Add garlic stir.
  13. Add noodles and stir constantly
  14. Add sauce and keep stirring till noodles coated
  15. Add proteins and green onion and mix till protein is warmed
  16. Serve
