  • 1 egg yolk
  • 1 teaspoon milk or cream
  • Cornmeal pastry dough
  • 2 1/2 cups (320 g) all-purpose flour
  • 2/3 cup (102 g) yellow cornmeal
  • 2 teaspoons sugar
  • 2 1/2 teaspoons kosher salt
  • 170g unsalted butter, cut into 1/2-inch pieces and chilled
  • 6 tablespoons olive oil
  • 4 to 8 tablespoons ice water
