Sloppy Joes

Ingredients

  • 1 lb ground beef
  • 1/2 small onion, diced
  • 1/2 red pepper, diced
  • 1/2 stalk celery, diced
  • For the sauce:
  • 1/2 cup ketchup
  • 1/2 Tbs. tomato paste
  • 1 Tbs lemon juice
  • 1 Tbs honey
  • 1/2 Tbs yellow mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt

Directions

  1. Heat a large skillet over medium heat.
  2. Add the ground beef & cook until browned, breaking up as you go. Once cooked through, drain all but 1 Tbs. of the fat.
  3. Add onion, celery & bell pepper and season with about 1 tsp salt.
  4. Continue cooking until the ground beef begins to stick to the pan a bit, 5-7 minutes.
  5. While the meat & veggies cooke, whisk together your sauce ingredients.
  6. Add the sauce & stock. Allow the mixture to thicken & simmer 15-20 minutes.
