Heat a large skillet over medium heat.
Add the ground beef & cook until browned, breaking up as you go. Once cooked through, drain all but 1 Tbs. of the fat.
Add onion, celery & bell pepper and season with about 1 tsp salt.
Continue cooking until the ground beef begins to stick to the pan a bit, 5-7 minutes.
While the meat & veggies cooke, whisk together your sauce ingredients.
Add the sauce & stock. Allow the mixture to thicken & simmer 15-20 minutes.
