  • 1 cup salt
  • 1 cup brown sugar
  • 2 gal veg stock
  • 2 cups cider vinegar
  • 3 TBSP pickling spice
  • 2 onions quartered
  • 1 carrot quartered
  • 1 TBSP whole peppercorns
  • 4 Bay Leaves
  • Fresh Rosemary and Sage
  • 1 10lb bag ice
  • 2 gal cold water
  • Browning sauce
  • 2 TBSP Worcestershire
  • 4 TBSP Kitchen Bouquet Browning Sauce
  • After Brown Sauce
  • 2 TBSP Salt
  • 2 TBSP Paprika

Directions

  1. 1)Mix brine and pour in large clean container with ice
  2. 2) Add Turkey and brine 8-12
  3. 3) Remove and dry Turkey
  4. If possible keep in fridge to dry 12hrs
  5. 4) Add browning sauce to skin
  6. 5) sprinkle paprika and salt to skin
  7. 6) fill inside cavity with orange quarters
  8. 7) tie legs
  9. 8) smoke 225 for 7-8hrs
