Soft Pretzels

Ingredients

  • 1-1/2 cups water( heated in the microwave to 110-115 degrees)
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 2-1/4 teaspoons yeast
  • 22 ounces all purpose flour
  • 1/4 cup melted butter
  • Later:
  • 6 cups water
  • 2/3 cup baking soda
  • 1 egg yolk
  • 1 tbsp water
  • Kosher salt

Directions

  1. Add the sugar, salt, and yeast to the water and let sit until foamy
  2. Start with the flour in the bowl of a stand mixer and the dough hook
  3. Add the yeast mixture and the butter
  4. Mix on low until it comes together
  5. Then, mix on medium for 4-5 minutes until dough is smooth
  6. Remove the dough from the bowl, spray it, then put the dough back
  7. Cover with a moist towel
  8. Let sit for 1 hour
  9. In the meantime, line 2 trays with parchment and take out a scale, bench scraper, and gloves
  10. Once dough has doubled in size, take it out of the bowl
  11. Separate it into 8 equal pieces using the scale and a bench scraper
  12. Take each piece, flatten it out, roll into a log, and stretch to 18-24 inches
  13. Twist into a pretzel shape, place on tray, and cover with towel
  14. Preheat oven to 425
  15. Place the water in a wide pot
  16. Boil, lower heat, and add 1/2 of the baking soda
  17. Dip 2 at a time, into the water, for 30 seconds each
  18. Place back on the tray
  19. Mix the egg yolk with the water and brush over pretzels
  20. Top with salt
  21. Bake for 15 minutes, rotating halfway, until brown
  22. Cool for 5 minutes
