Ingredients

  • 4 eggs
  • Salt & pepper
  • Cilantro
  • 1/2 chopped red pepper
  • 2 scallions chopped
  • 1/2 cup Monterey Jack or cheddar shredded
  • 1 can of black beans
  • Tomatillo Salsa
  • Avocado
  • EVOO

Directions

  1. Mix egg, salt and pepper and cilantro to taste in medium bowl. Mix beans, onion, pepper, cheese in a medium bowl, there will be some extra.
  2. Heat oil in skillet, pour egg, after 3 minutes lift egg and tilt so uncooked fills under cooked egg. Then flip omelet. Add bean mixture over half of omelet and fold over. Cook 1 minute or until cheese melted. Cut in half and serve with avocado slices and salsa poured over omelet
