Heat oil in skillet, pour egg, after 3 minutes lift egg and tilt so uncooked fills under cooked egg. Then flip omelet. Add bean mixture over half of omelet and fold over. Cook 1 minute or until cheese melted. Cut in half and serve with avocado slices and salsa poured over omelet
